<\/p>\nIn fulfillment of the fourth goal of the Sustainable Development Goals (Quality Education), a master’s thesis entitled “The Use of Some Plant Extracts in Treating Enzymatic and Non-Enzymatic Browning of Some Foods” was defended at the College of Education for Pure Sciences at the University of Mosul on Sunday, August 17, 2025.
\nPart of the thesis defense was attended by the Assistant Dean for Administrative Affairs, Assistant Professor Dr. Younis Saadi Saeed, the Head of the Chemistry Department, Assistant Professor Dr. Omar Thanoon Ali, and a number of faculty members from the department.
\nThe study, submitted by the student Saja Ahmed Salem from the Department of Chemistry, addressed the preparation of oil and aqueous extracts of both sumac and sesame plants. The phenolic compounds caffeic acid, ferulic acid, gallic acid, quercetin, rutin, vanillic acid, syringic acid, and hydrobenzoic acid in the aqueous extract of sumac were identified and quantified at concentrations of (78.9, 112.4, 125.6, 78.9, 96.5, 80.6, 84.6, and 50.9) micrograms\/g using HPLC. The potential of these plant extracts to prevent browning was studied.
\nThe discussion committee was chaired by Professor Dr. Nashwan Ibrahim Abbou, with Assistant Professor Dr. Muhammad Fadel Hamid Haddad and Assistant Professor Dr. Hamza Nameq Hameed as members, and Professor Dr. Omar Younis Muhammad as both member and supervisor.
