College of Agriculture and Forestry discusses the physicochemical and rheological properties of gelatin extracted from bovine hides and bones
The Faculty of Agriculture and Forestry at the University of Mosul discussed a master’s thesis entitled “Study of the physicochemical and rheological properties of gelatin extracted from bovine hides and bones” on Tuesday, January 21, 2025.
The study, submitted by student Muhammad Saab Adel Al-Bakri in the Department of Food Science, dealt with the study of the physicochemical properties of both types of gelatin, comparing them with commercial gelatin and determining the best of them, such as gel strength, flexibility and cohesion.
The study touched on the functional properties, which are the stability of the foam and its expansion, which have economic and practical importance, and also compared them with the properties of commercial gelatin for the marshmallow candy produced from gelatin extracted from bovine bones and skin.
The discussion committee was chaired by Prof. Dr. Mazen Mohamed Ibrahim, with the membership of Dr. Qaswa Youssef Jamil and Dr. Laila Azhar Ahmed, and supervised by Dr. Basmaa Saaduddin Sheet.
