Master’s thesis at the College of Agriculture and Forestry on evaluating some safety indicators of canned meat in local markets

The College of Agriculture and Forestry at the University of Mosul discussed a master’s thesis entitled “Evaluating some safety indicators of canned meat in local markets”, on Tuesday, February 11, 2025.
The study, submitted by student Qabas Kanaan Abdullah Muhammad in the Department of Food Science, tackled collecting a variety of local and imported canned meat and conducting some microbial, chemical and molecular tests to evaluate the quality of canned meat.
The study aimed to investigate the presence of pig RNA in different canned meat products available in the local markets of Mosul and to determine the concentrations of some heavy elements (lead, cadmium, zinc) in these products, as well as to investigate the presence of bacterial contamination with Clostridium perfringens anaerobic bacteria and Bacillus subtilis aerobic bacteria in different types of canned meat and to determine the chemical composition ratios of different types of canned meat products.
The discussion committee was chaired by Dr. Arqam Mohammed Azhar, with the membership of Dr. Tariq Zaid Ibrahim and Dr. Zaman Nazim Zahir, under the supervision of Dr. Hala Abdulhadi Saleh.
