Discussion of a Ph.D. Thesis in the Department of Food Science

A Ph.D. thesis was discussed in the Department of Food Science/ College of Agriculture and Forestry / University of Mosul for the student (Ahmed Abdel Nasser Thanoun Al-Khashab) on Monday, April 29, 2024. The thesis title was (The Effectiveness of Silver Nanoparticles and Nisin Loaded on a Chitosan Membrane on the Characteristics of Cold-preserved Chicken Meat). Prof. Dr. Ali Farouk Al-Maadidi (Assistant Dean For Scientific Affairs), and several college teachers attended part of the discussion.
The study aimed to evaluate the effectiveness of chitosan membrane loaded with Nisin and Ag-Nanoparticles (Ag-NPs) (biosynthesized using Aspergillus niger mushroom extract) on the chemical, physical and sensory characteristics and microbial content of chicken breast meat when stored. At four °C for 28 days, biosynthesis of Ag-NPs and chitosan membranes supported by either nisin or Ag-NPs and determining its properties and effectiveness after wrapping breast meat pieces with each for 28 days at refrigerator temperature.
